Light meal ideas for after Thanksgiving dinner?

I’m having a small group of people over the evening of Thanksgiving. Everyone will have already eaten a big lunch so I wanted to serve something light and easy. I was thinking appetizers (i.e. cheese & crackers w/summer sausage, deviled eggs, veggie tray, stuffed mushrooms, bruschetta, spinach dip). Any other ideas?

Your ideas are all great. How about a crockpot with little smokies and BBQ sauce or sweet and sour meatballs?

    Well, have turkey sandwiches. Then you can have potato chips, or a couple of veggies like corn, green beans, or hashbrown casserole.

    The only other thing I can think of is a good green salad. I love ’em! You could have little bowls of different things(veggies and fruit) so people could put whatever they wanted in it. Kinda like a salad bar. Whole wheat crackers(or bread) are also good with it.

    Salmon Croquettes

    1 12 oz can pink salmon
    2 Whole eggs
    1/4 cup chopped onion
    1/4 cup all purpose flour
    2 tablespoons yellow corn meal
    1/2 teaspoon salt (depending upon the
    brand and how much salt is in it you
    can leave this out if you want.
    1/2 teaspoon ground black pepper

    You basically pour all of the ingredients into
    a large bowl and mix them. A large spoon or a
    potato masher worked fine. I add the flour last
    because I sometimes adust the amount to control the
    consistency. Mold the dough-like mix that you
    end up with into patties (like thick homemade
    hamburgers).

    Coat a frying pan with a little cooking oil. Crisco
    works just fine. Preheat the oiled pan over medium
    heat. Slip the patties into the pan, fitting as
    many as you can but leaving room to turn them. Cook
    until medium brown on one side, then turn over and
    do the same to the other side.

    Try this and have crackers on hand (or get a loaf of french bread, cut and toast it slightly in the oven)

    1/2 pound ham chopped very fine
    1 8-oz brick cream cheese at room temp
    2-3 tbsp miracle whip
    1/4 cup finely shredded cheddar cheese
    3-4 stalks of green onion finely chopped

    Mix together until well blended, chill at least one hour before serving. Place in nice dish with crackers or toasted french bread.
