Thanksgiving Dinner ideas? (vegetarian, and meat eater)?

She’s a vegetarian and im a meat eater, so basically no turkey –
what are some simple to make food ideas for the two of us?

what we have so far:
turkey sandwhich for me
mac and cheese / pasta / meatless lasagna for her

we need more ideas,

Try all the trimmings with a Quorn roast!!!! That is what we are having for Christmas. I am a Veggie and my husband isn’t and we occasionally have a Quorn roast and roast potatoes, stuffing balls, yorkshire puddings, gravy and veg… Its delicious!!!!! Its as close to a turkey as you can get and it not be real!!!!! If you can, try one before Thanksgiving to see if you both like it, they aren’t too pricey and they will feed 4 to 6 people or make 2 or 3 meals if its just the 2 of you. *Smile*

    cheese potatoes…veg. Family recipe soooo delicious.
    1 pckg country style hash browns
    1 stick butter
    1 can cream of mushroom soup
    1 container sour cream
    1 stalk green onion
    4 cups cheese
    combine soup butter melt
    combine with hashbrowns sour cream green onions and cheese.
    fold together.
    place an additional 1/2 cup cheese on top.
    cook at 400 1 hour 15 min
    let sit 20 min
    serve

    You can make a lot of the traditional side dishes meat free.
    How about mashed potatoes? Candied yams? Side veggies like green beans or broccoli?
    I’m the only veg in a family of non-vegs and I eat like a pig on Thanksgiving.

    Pumkin curry with apples and lentils.

    Place 1 cup red/brown lentils, 6 cups water and 1/2 ts turmeric in a saucepan; cook about 45 minutes over medium-low heat.
    Drain, reserving 2 1/2 cups cooking liquid.
    Heat oil in large saucepan; add 1 chopped onion.
    Saute over medium heat 4 minutes.
    Add 2 chopped tomatoes and 3 cloves garlic; cook 4 minutes more, stirring occasionally.
    Add 1 1/2 tb curry powder, 1 ts cumin, pepper, salt and some whole cloves; cook 1 minute more, stirring frequently.
    Stir in lentils, reserved cooking liquid, 2 cups cubed pumpkin, 2 cups potatoes, 1/2 head cauliflower and 4 chopped carrots; cook over medium-low heat until vegetables are tender, 35 to 45 minutes.
    Stir in 2 cups kale, or collard greens and 2 chopped apples; cook about 15 minutes more, stirring occasionally.

    Transfer to a large serving bowl and serve with basmati or jasmine rice.

    This is an easy dish, and so good, suing all the flavours of the season.

    STUFFED PUMPKIN

    Cut a medium hubbard, turban, or carnival pumpkin in half and remove the seeds and flesh leaving an inch of flesh to hold the stuffing- save flesh for soup. ( You want one of those colourful, much sweeter denser flesh pumpkins, not just the plain orange ones.)
    Put 1 carrot, 1 potato, I head broccoli, 2 oz butter beans or favas, 2 oz green dried split peas soaked overnight, 1 onion, 1 tb fresh rosemary into a large pan with some bouillon and 2 cloves garlic
    Bring to the boil and simmer for 40 mins with a lid on.
    Mix 4 oz bulgar wheat around in the pan until it has soaked up the liquid.
    Stick it in the pumpkin and cover the pumpkin with foil on a baking tray.
    Cook for about 2 hours in a preheated oven at 200C, Gas mark 6.

    PUMPKIN SOUP

    Halve a pumpkin and remove flesh and seeds. Keep the flesh and chop into pieces.

    Saute oil, garlic, and a chopped onion. When onion is translucent, add some chil flakes and 2 cups of water, add a spoonful of bouillon and stir to make a gravy. Simmer til it’s reduced a little, and add a splash of soysauce. Stir the gravy. Keep on medium heat.

    Add the chopped pumpkin flesh and season with salt and pepper, cover with lid and bring to simmer for 20 minutes until the flesh is soft.

    Meanwhile, in the oven, toast the seeds on an oiled salted tray, cover the seeds with the oil and salt, and squeeze lime joice over them.
    Toast the seeds, stirring occasioanly so they don’t stick.
    On another tray in the oven, toast small rounds of french bread, sliced into small croutons- of make squares of toast- season the oil and cover the toast, so when they bake, they become crunchy and very flavourful.

    Wehn the pumpkin is cooked, drain and puree the flesh.
    Add one pack of silken tofu. Puree again. Add cumin, salt and pepper to the soup.
    Keep hot in the same pan.

    transfer to small warmed bowls and add a swirl of fresh plain yoghruut, through the rich soup.
    Season with salt and pepper and fresh chopped mint.
    Add some of the season croutons to the top, and top with toasted seeds.

    my whole family is vegetarian, so our meals never have any meat.

    mashed potatos (mushroom gravy?) sweet potatoes, peas/corn
    theres a lot more but i cant think of it now because we went to Tim Hortons for thanksgiving this year (in canada we already had thanksgiving)

    Just the two of you? Vegetarian mashed potatoes, stuffing, and gravy for two. Ditto veggies (green beans? corn? I don’t know what you like). Cranberries for two.

    I like little timbales or mini casseroles for one-person dishes. Yummy.

    Most of the things at a typical Thanksgiving table are vegetarian – and that’s what I would fill up on. Following is a typical menu list for my family’s dinner:

    -Mixed green salad with toasted walnuts
    -Turkey or ham (the only meat on the table)
    -Cornbread dressing
    -Mashed potatoes
    -Mashed sweet potatoes
    -Rolls/bread
    -Several cooked vegetable dishes, such as green beans with sauteeed onions and mushrooms topped with toasted almonds, or steamed brussel sprouts with cheese sauce or vinagrette
    -Pumpkin or snow pie (like a custard without yolks, topped with whipped cream)

    If you need to replace the meat, try a bean dish with lentils, great northern beans (slow cooked boston beans – mmm), or whatever suits your fancy. Soups such as minestrone, dal, lentil, 13 bean chili or the like are very nice as well.

    It’s quite easy to make a meal around or without the turkey – it’s generally dry and flavorless anyway. The rest of the stuff is what really tastes great. Enjoy!
