How about a double-layer pumpkin pie?

1/2 brick cream cheese, softened
1 Tbsp milk
1 Tbsp sugar
1 small tub cool whip, thawed, divided
premade graham pie crust
1 cup milk
1 can pumpkin (15 oz)
2 small pkg vanilla pudding mix
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 cup chopped pecans

Mix cream cheese, 1 tbsp milk and sugar in large bowl with wire whisk or mixer til well blended. Gentle stir in half the whipped topping and pecans, spread onto base of crust.

Pour 1 cup milk into large bowl. Add pumpkin, dry pudding mixes and spices. Beat 2 min or until well blended. Spread over cream cheese layer.

Refridgerate 4 hrs or until set. Top with remaining whipped topping just before service. Store leftovers in fridge.

Light meal ideas for after Thanksgiving dinner?

I’m having a small group of people over the evening of Thanksgiving. Everyone will have already eaten a big lunch so I wanted to serve something light and easy. I was thinking appetizers (i.e. cheese & crackers w/summer sausage, deviled eggs, veggie tray, stuffed mushrooms, bruschetta, spinach dip). Any other ideas?

Your ideas are all great. How about a crockpot with little smokies and BBQ sauce or sweet and sour meatballs?

What kind of stuffing are you planning on making this Thanksgiving?

I’m going to cook a sausage cornbread stuffing. I made it last year, and it turned out great. I’ve also seen some other good recipes.

I’ll be making two kinds for Thanksgiving dinner this year. It’s kind of a family tradition to have an extra kind of cranberry sauce and at least two or three different kinds of stuffing.

I’ll be making a batch of traditional stuffing and another of Sausage-Apple stuffing. The recipes are in the link that’d below.

For the record, I really prefer the texture of the dressing when it’s cooked in a separate backing dish and not inside the turkey.
