I need recipe ideas for a vegetarian Thanksgiving dinner.?

Recipes may include fish dishes. vegan/vegetarian/fish/soy/some dairy

Mock Thai Fish Cakes – Vegetarian Bean Cakes

I had to post this recipe as it is my DD’s favourite lunch food. Serve with a salad and sweet chilli sauce. Delicious. I do not use the whole amount of red curry paste or I substitute (which is what we prefer) with a Kikkomans sweet soy, lime and ginger marinade.

440 g cannellini beans, drained and rinsed
1/2 red onion, chopped
2 tablespoons fresh coriander (cilantro)
2 teaspoons fresh mint leaves
1/2 teaspoon lime rind
2 teaspoons red curry paste
1/4 cup spelt flour

Mix all ingredients except flour together in a bowl.
Using a hand blender, blend until well mixed.
Add flour and mix well. Should have a not too wet consistency otherwise add a bit more flour.
Heat a pan and add a little peanut oil or grapeseed oil.
Forming little patties fry on each side until golden.

Hopefully you can get an idea from this, this is usually what my family has for Thanksgiving dinner:

Turkey
Stuffing (dressing)
Potato salad
Mashed potatoes or yams
Shrimp or Pasta salad
Fresh-hot homemade bread or rolls
Cranberry sauce
Cream corn
Green bean salad
Deviled eggs
Sprite
Pepsi
Sparkling grape juice

For dessert:
Dutch apple pie
Pumpkin pie

Need ideas for thanksgiving dinner for a diabetic?


Most diabetics can eat the normal foods, they can adjust their insulin if needed for a special meal. A sugar free desert may be in order though –

Sugar Free Pumpkin Pie
1 (9 inch) pie crust, baked
1 (.25 ounce) envelope unflavored gelatin
2 tablespoons cornstarch
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 (15 ounce) can pumpkin puree
1 (12 fluid ounce) can evaporated milk
2 eggs, beaten
16 packets artificial sweetener

In a large saucepan, combine gelatin, cornstarch, spices and salt. Stir in pumpkin and evaporated milk. Let stand for 5 minutes to soften gelatin.

Cook and stir over medium heat until mixture bubbles; cook and stir for 2 minutes after bubbling. Remove from heat.

In a medium bowl, gradually stir about 1 cup of cooked mixture into beaten eggs. Return to remaining mixture in saucepan and cook over low heat for 2 minutes; do not boil. Remove from heat and stir in artificial sweetener after filling has cooled to 140° F.

Pour mixture into pie crust; cover and chill for 6 hours or overnight. Serve with whipped cream if desired.

Any ideas for something kid friendly to make a thanksgiving dinner?


Not sure if you mean something kids can make, or something kids will like to eat. Also not sure if you mean a whole meal or just side dishes.

If it’s cooking with kids: mac & cheese is a good side for kids usually.

To cook with kids: cookies, pumpkin muffins, or bake a cake.

What are must have menu items for Thanksgiving dinner?

What menu items do you have to have for Thanksgiving Dinner? Please share ideas and recipes if possible. I would appreciate your help.

Wow…no one has mentioned a pumpkin pie. It’s a must to squeeze in a small slice (topped with whipped cream)…

***Perfect Pumpkin Pie***

Ingredients
1 (15 oz.) can pumpkin (about 2 cups)
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9-inch) unbaked pie crust

Instructions
HEAT oven to 425°F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust.
BAKE 15 minutes. Reduce oven temperature to 350°F; bake an additional 35 to 40 minutes or until knife inserted 1-inch from crust comes out clean. Cool. Garnish as desired.
