What is your favorite Pumpkin recipe for Thanksgiving dinner?

I am in charge of bringing the desserts this year and I was wondering if you had any suggestions other that the usual Pumpkin Pie?

I have made this recipe several times and it always turns out beautifully.

Please note that you will need a springform pan and that you will need to make it ahead of time. Optimally, the day before. It requires a few hours to drain the pumpkin puree and then several hours to bake. It also requires you to refrigerate it overnight so that it can set.

    Pumpkin dinner rolls
    Ingredients:
    1 c. sugar
    1/2 c. warm water
    2 c. warm milk
    ¼ c. butter, softened or melted
    2 c. mashed cooked pumpkin
    2 t. salt
    1/2 c. wheat germ
    10-12 c. all-purpose flour
    7 t. dry yeast

    Instructions:
    1. In large mixing bowl, combine sugar, water, milk, butter, pumpkin, and salt. Mix well.

    2. Add wheat germ, 7-8 cups of the flour, and yeast. Mix, and then continue adding flour and kneading until dough is elastic and not sticky.

    3. Place dough in greased bowl; grease top of dough, cover with a towel, and set in a warm place until doubled (about 1 hour).

    4. Punch dough down and divide into thirds. Divide each third into 16 pieces and shape into balls.

    5. Place on greased baking sheets, and grease tops. Cover and let rise until almost doubled, about 30 minutes.

    6. Bake at 350 degrees for 15-18 minutes, until tops are golden. Remove to wire racks and cover with a towel. Serve with butter.

    Pumpkin Pie

    2 eggs
    2/3 cup sugar
    1 ¾ cups pumpkin
    ½ tsp salt
    ½ tsp ground cloves
    1 tsp each cinnamon & ginger
    ¼ tsp allspice
    1 cup evaporated milk

    Beat eggs slightly and mix all other ingredients. Bake at 425% for 15 minutes then turn oven back to 350 degrees and bake additional 40 to 50 minutes or until knife comes out clean.

    YUMMY PUMPKIN CAKE-
    2- 15 oz. cans of pumpkin
    1- 12 oz. can evaporated milk
    2 tsp. cinnamon
    1 pkg Yellow Cake mix ( I use Betty Crocker Super Moist)
    4 eggs
    1 1/2 cups Sugar
    1/2 tsp. nutmeg
    1 cup melted butter
    1 cup nuts
    Beat pumpkin, milk, eggs, sugar and spices. Pour into ungreased 13"x9"x2" pan. Sprinkle dry cake mix over pumpkin. Pour butter over top. Sprinkle with nuts. Bake at 350′ for one hour- no longer. Cool. Serve with Cool Whip. (This is more the consistency of a stiff pudding, rather than cake.)

    Pumpkin Cake recipe

    Ingredients:
    3 ½ cups of flour.
    2 cups of sugar.
    1 ½ cups of pumpkin.
    1 ½ cups of chocolate chips.
    1 ½ cups of walnuts.
    1 cup of butter.
    4 medium eggs.
    2 teaspoons of soda.
    2 teaspoons of cinnamon.
    1 teaspoon of salt.
    1 teaspoon of nutmeg.
    ½ teaspoon of ginger.
    ½ teaspoon of cloves.

    Preparation Instructions:
    Preheat your oven to 375°F (190°C).

    Cream the butter, sugar and eggs.

    Add the cinnamon, salt, nutmeg, ginger and cloves.

    Add the flour and the pumpkin.

    Stir in the chocolate chips and walnuts.

    Grease the bottom of two 9*5 inch loaf pans.

    Bake for about an hour or until the toothpick trick works.
