Do you have any delicious ideas for Thanksgiving dinner that do not involve turkey or ham?
On Thanksgiving afternoon. my oldest daughter will be celebrating with her fiance and his family. My youngest and I will be going to my boyfriend’s family dinner. Afterward, I would like to have a small, simple but delicious dinner for both of my children, my soon to be son-in-law, and my boyfriend. I do not want to prepare anything that is time consuming. No one really cares for turkey, either. I thought about some kind of soup or chowder. If you all have any ideas I would greatly appreciate it. Or any recipes or website addresses.
My favourite home made soup.
Get some cooked chicken breasts from your deli.
Fry or saute one finely chopped onion in a tablespoon of butter until it is translucent. Take out the onions and mix 2 tablespoons of flour with the remaining butter. You will get a thick lumpy paste…not to worry. Over a gentle heat slowly add milk to the flour- butter mix, stirring all the time. Add a little salt & pepper, some fresh parsley. Then when the mix has thickened you can add some cooked potatoes and the chopped chicken. Use a blender to puree the soup and serve….Mm mmmm…sometimes I leave out the parsley and after blending add a can of sweetcorn.
Serve with hot crusty bread and fresh dairy butter.
